Sally's Recipe Of The Week: Seasoned Seared Scallops

Seasoned Seared Scallops
Serves 2


This dish is done in minutes and it's so good.
Here is what you will need:

1/2 pound large sea scallops- thawed
1/3 cup seasoned bread crumbs (I make my own, it's next)
1/4 cup freshly grated Parmesan cheese
1 lemon
2 tsp olive oil
pat of butter
salt and pepper
chives (optional)

Like I said I make my own bread crumbs. I store bread in the freezer and just pull some out when I need it. Of course you can use seasoned bread crumbs from the store. I just put a thawed out whole wheat piece of bread in the food processor and added Italian seasoning and a little salt and pepper.

Mix together the bread crumbs and the Parmesan cheese in a large flat dish.  Dry off the scallops then press them into the bread crumbs. Get them good and coated on both sides.

Heat the oil and butter in a frying pan. Sear the scallops on both sides for a total of about 3 to 4 minutes. For me it was 2 minutes on one side then about 1 minute on the second side. It will depend on the size of the scallops. You don't want to overcook them. I often do a test one to get an idea on the cook time.

Garnish with the chopped chives and serve with lemon slices. I added a side of cauliflower mash and broccoli.  Lets Eat!
