Sally's Recipe Of The Week: Creamy Tuna Noodles

Creamy Tuna Noodles

Serves 2

This is a pantry/freezer dish. I needed to make dinner and really did not feel like going to the store so I looked at some staples and went for it! I used frozen vegetable pasta. You can use any pasta you like. Just cook it about one minute less than the package directions, al dente.

Here is what you will need:

1 can of albacore tuna in water

1 package of vegetable pasta - I used penne

1/2 cup frozen peas

1/2 cup chopped onion

1/2 cup chopped carrots

1 or 2 garlic cloves, chopped

1/2 cup whole milk or half and half (or even cream)

1/4 cup chicken broth

1/2 lemon

1 TBS Dijon mustard

Parmesan cheese for grating over finished dish

olive oil

salt and pepper

Heat up about 1 TBS oil in a large skillet. Saute the onions and carrots on medium heat until soft and season with salt and pepper. When they are soft, add in the garlic and stir for one minute.

Add in the milk and chicken broth and turn up the heat a bit to reduce.

Cook the frozen vegetable pasta according to package directions.

Stir in the mustard and turn down the heat.

Drain the tuna and add it into the pan, breaking it apart.

Add in the peas.

Add in the pasta. Taste and season as needed.

Add a squeeze of lemon juice.

Spoon into a bowl and top with some fresh grated cheese. Let's Eat!!
