Recipe of the Week: Green Fig Salad
From The Chefs at Sandals La Toc in St. Lucia

 
Sally took a cooking class at Sandals. Here is one of the recipes they made. 
 
Ingredients:
4 cups of green figs (that is what they call green bananas) cut into bite size pieces.  (Can use potatoes.)
2 cups of shredded cooked salted swordfish. (Or can use cooked crab or chopped up cooked shrimp)
½ cup chopped sweet onion
½ cup chopped green peppers
½ cup chopped red peppers
1 cup chopped tomatoes
pepper to taste
½ cup of mayonnaise (to taste)
 
Directions:
Mix the figs/bananas, fish and vegetables in a large bowl.  Fold in the mayonnaise the amount really depends on how you like it. Season with pepper to taste if fish is salty you won’t need to add additional salt.
Chill then serve.
 
Sally’s Notes: I thought this was a little bland for me so I will make it at home with some garlic or maybe even jalapeño peppers.
