Sally's Recipe of the Week: Salmon Tacos with Mango Pico de Gallo
You won't believe how good these are. Yummy!
Sweet and Spicy Salmon Tacos with Mango Pico de Gallo From Coastal Living Magazine Serves 4 Ingredients for Tacos:1 16 ounce package of coleslaw or shred 10 cups of red or green cabbage 1 /2 cup sour cream ½ cup mayonnaise ¼ cup fresh lime juice ½ cup fresh cilantro leaves, lightly chopped ½ tsp salt ½ tsp ground pepper 2 TBS (divided) Mexican Seasoning or Taco seasoning or make your own, (Recipe at bottom of page) 1 to 1 ½ pound salmon filet2 TBS olive oil8 corn or flour tortillas Directions”Combine first 7 ingredients in a bowland add 1 TBS of Mexican seasoning.Mix well, cover and chill until ready to use. Season fish with remaining 1 TBS of Mexican seasoning. Heat oil in a large non-stick skillet over medium high heat, add the fish and cook 4 to 5 minutes per side. (Or you can grill the fish if you like, just brush the fist with oil , season and put on grill.)Break fish up in a bowl after cooking.Heat the tortillas according to package directions. Fill with cabbage, salmon and top with Pico. Ingredients for Mango Pico de Gallo 1 finely diced mango¼ cup finely diced red onion ½ to 1 tsp minced chipotle in abodo sauce 1 clove garlic minced 1 TBS fresh lime juice Directions:Combine all ingredients in a small bowl.
Sally’s Notes:These were so good!I love salmon and am always looking for new ways to prepare it. Plus it is good for you too!A helpful tip when a recipe calls for “Mexican Seasoning” or “Greek Seasoning” or anything like that google it, you can probably mix the herbs yourself from what you already have in the pantry. Mexican Seasoning Mix From About . com Ingredients:·1/4 cup dried oregano ·3 tablespoons dried chile powder ·2 teaspoons cumin ·2 teaspoons garlic powder ·1 tablespoon onion powder ·1 teaspoon salt ·1 pinch ground cloves ·1 pinch ground cinnamon Mix together ingredients thoroughly and store in an airtight container in a cool, dark place such as a cupboard.
